French beans are a summer favourite, but bottle them in a relish and you can have them any time. This delicious recipe combines French beans with ginger, garlic, chilli and spices to make a relish for a hunk of cheese and some crusty bread, or cold meats and chicken salad. It’s made in small batches for optimum freshness by Rick Sheepshanks and Peter Kerr at their Saucery in an old Suffolk coach house. 400g
