Ormer eating in Jersey

I was lucky enough to go on a really special trip to Jersey with the Fifteen apprentices. We got to taste some very unusual seafood, some of which is indigenous to the area. It was a bit of a battle against the elements when we were attacked by razor-sharp sleet on an exposed beach, but it was worth the injuries when we were given oysters to eat straight out of their beds and funny-looking reclusive shellfish called 'ormers', which hide on the underside of rocks and are a rare Jersey delicacy. They are often called 'sea-ears' because they look a lot like a green ear in a thick shell - so disgusting that this description probably flatters them. They are quite tough so need to be thinly sliced or cooked for a while and have a soft, chewy texture and taste faintly fishy-in a good way. We also tried large ridged clams called 'praires' that were delicious. Seafood lovers (with strong stomachs) must visit Jersey!
