Baked berries with brandy & mascarpone

1. In a bowl, gently mix together the berries, brandy and 2 tbsp soft dark brown sugar. Pour into a heatproof dish. Evenly dot with the mascarpone and sprinkle over the remaining 2 tbsp sugar. Place under a hot grill for 5 minutes until bubbling and caramelised.

100ml brandy
4 tbsp soft brown sugar
250g mascarpone
