1. Gently heat 800ml water, 400g of the sugar and the finely grated zest of 4 lemons in a pan over a medium heat, stirring until the sugar has dissolved. Set aside to cool. Blitz the basil in a
food processor with the remaining 50g of sugar, then stir into the sugar syrup, along with the juice of all of the lemons. Leave for 5 minutes to macerate, then strain.
Now you have your cordial keep in an airtight bottle until ready to use. To serve, pour a couple of inches into a jug or glasses, add ice, top up with sparkling water
and throw in some lime slices.
