Chicken baked in yoghurt

1. Preheat the oven to 180C/gas 4.
2. In a frying pan over a medium heat, sauté the sliced onions till soft. Remove. Sauté the chicken breasts for 5 minutes, till golden. Transfer to a baking dish with the onions. Mix the yoghurt, eggs, garlic, flour, dried mint and ground cumin. Season, then pour over the chicken. Mix the parmesan and breadcrumbs, then sprinkle over chicken. Bake for 40 minutes, till browned and chicken is tender.

4 chicken breasts (bone on)
500ml Greek yoghurt
2 eggs, beaten
2 garlic cloves, sliced
2 tbsp plain flour
2 tbsp dried mint
1 tsp ground cumin
2 tbsp parmesan, grated
30g each dry and fresh breadcrumbs
