London Cocktail Week no3 – Cosmopolitan Daisy

Most of us are familiar with the vodka cosmopolitan, but I recently discovered that before Prohibition a similar drink was made using gin. This is my version.
1. To make the raspberry syrup, heat the raspberries in the water. When the water starts to boil, add the sugar and stir to dissolve. Pass the mixture through
a sieve. Do not push it through or the syrup will become a purée.
2. Muddle or crush the 6 raspberries in the syrup. Add all the ingredients into a cocktail shaker and shake everything on rock ice. Double strain through a fine sieve into a chilled cocktail glass.
This recipe was selected to mark London Cocktail Week, which runs from 11–17 October at prestigious venues throughout the capital.

• 150g raspberries
• 125ml water
• 125g caster sugar
