Cucumber Margaritas

Fancy a sneaky midweek cocktail? this little number is the perfect summer cooler.

Put the cucumber, tequila, Cointreau, lemon and lime juice, sugar syrup and ice in a blender and whizz until well combined. Put some crushed ice into 4 glasses and pour over the margarita. Halve the cucumber slices, coat with the sea salt and place them on the rims of the glasses. Serve immediately.

200g cucumber, chopped, plus 2 slices to serve
150ml 100% agave tequila
75ml Cointreau
Juice of 2 lemons
Juice of 2 limes
75ml sugar syrup
A handful of ice, plus extra to serve
1 tbsp sea salt
