Pomegranate juice is lovely in cocktails, especially in this simple, summery take on a classic.

1. In a double old-fashioned glass, bruise the mint with the lime juice and sugar syrup. Add crushed ice, followed by the rum and pomegranate juice. Top with a splash of soda and stir. Decorate with the mint sprig.

• 4 mint leaves, plus
1 sprig to decorate
• 15ml lime juice
• 25ml sugar syrup (50/50 sugar and water simmered for 5 minutes)
• crushed ice
• 45ml light rum
• pomegranate juice
• soda
