Sabudane ki kheer aur aam

Atul Kochhar's cardamom-scented sago pudding with fresh mango.
Method
1. Soak the sago in warm water for 5–7 minutes, until soft. Heat the milk and sugar over a low heat, stirring, until the sugar dissolves. Add the cardamom and soaked sago and simmer for 15–20 minutes. Check the sweetness and add more sugar if needed. Add the raisins just before serving. Can be served hot or cold with sliced mango.

• 200g sago pearls
• 500ml whole milk
• 60g sugar
• 6 green cardamom
• 50g golden raisins, soaked in water for until puffed up
• 1 fresh mango, sliced
