Spicy prawn & coconut salad

1. Mix the dressing ingredients together. Combine all the other ingredients in a bowl, dress and serve.

ingredients

• 12 cooked king prawns
• ½ cucumber, julienned
• 2 large handfuls of mange tout, julienned
• 2 large handfuls of beansprouts
• Ό fresh coconut, shelled, shaved
• ½ bunch each coriander, mint, thai basil, chopped
• 1 green and 1 red chilli, sliced

Dressing
• 1 green chilli, finely chopped
• 1 lemongrass, outer layers discarded, root finely chopped
• Small knob of ginger, finely chopped
• Juice of 2 limes
• Pinch of sugar
• 4 tbsp vegetable oil
