1. Mix the dressing ingredients together. Combine all the other ingredients in a bowl, dress and serve.

12 cooked king prawns
cucumber, julienned
2 large handfuls of mange tout, julienned
2 large handfuls of beansprouts
fresh coconut, shelled, shaved
bunch each coriander, mint, thai basil, chopped
1 green and 1 red chilli, sliced

1 green chilli, finely chopped
1 lemongrass, outer layers discarded, root finely chopped
Small knob of ginger, finely chopped
Juice of 2 limes
Pinch of sugar
4 tbsp vegetable oil
