Super food noodle salad

1. Prepare the noodles according to the packet. Bring a pan of water to boil, add the broccoli florets and cook for a couple of minutes. Add the peas and soya beans to the water, bring back to the boil, rinse, drain and refresh under cold water. To make the dressing place all the ingredients in a jar with a tight-fitting lid, and shake well. Combine the noodles, peas, soya beans, broccoli and spring onions, mix in the dressing, the mint and the sesame seeds.

ingredients

200g rice noodles
a bunch of spring onions, finely sliced
a handful frozen peas
a handful frozen edamame beans
a small head of broccoli, cut into florets
1 tbsp toasted sesame seeds
a handful of chopped mint
Sesame dressing
3 tbsp olive oil
1 tbsp sesame oil
4 tbsp lime juice + zest of 1 lime
1 tbsp soy sauce
3cm piece of ginger, peeled and finely chopped
1 red chilli deseeded and finely sliced
tsp brown sugar
