union jacks

Mon 21 Nov 2011 @ 09:37 | story by Peter Berry

Where wood-fired flatbreads meet great British flavours. At Union Jacks, we want to take you on a journey of discovery through Britain and reintroduce you to familiar flavours, cooked and presented the Union Jacks way. Our incredible flatbreads and wood-fired cooking methods nod to traditions that are universally loved, and nearly all of the ingredients for the toppings are unabashedly local. We take a lot of pride in our sourcing philosophy, and look to our own back garden first in order to celebrate the wonderful growers, farmers and winemakers we have here in this country.
Ours is a union of ideas, traditions, and of people.

When Jamie met award-winning American chef Chris Bianco through a mutual friend, he quickly realized he'd found a kindred spirit and fellow food 'geek'. After bonding over a shared enthusiasm for beautiful ingredients and cooking in wood-fired ovens, they hatched a plan to work together and the Union Jacks restaurant concept was born. The menu combines Chris's technical expertise and artisan dough-making with Jamie's love of top-quality ingredients. We invite you to join us in celebrating Britain's beautiful food in a whole new way.

Chris Bianco is the head chef and owner of Pizzeria Bianco, a small restaurant in Phoenix, Arizona, with a very big reputation. It's known as one of the best places to get pizza in America and it's not uncommon to see people lining up for hours just to get a taste of Chris's hand-made creations cooked to perfection in his faithful wood-burning oven. The Bronx-born chef credits his aunt with igniting his love of cooking and for inspiring his long career in the kitchen. In 1985, Chris won two plane tickets to anywhere in the US and chose Phoenix on a whim. Fortunately for the locals - and for lovers of good food - he stayed and created something truly special with Pizzeria Bianco. On a visit to the UK two years ago, Chris fell in love with the produce and vibrant food culture he found in the markets, pubs and shops around Britain. Inspired and excited, he decided to stay and work with Jamie to create Union Jacks.
