AMERICAN STYLE BBQ CHICKEN

I love a good BBQ. There's nothing like getting your mates round and cooking a delicious meal to share outside – it's what summer is all about. But don't get stuck cooking the same old bangers and burgers.

This amazing spatchcock chicken comes ready-marinated to make sure the chilli, orange and fennel really gets under the skin and maximises the flavours. Made with love.

cooking instructions:
To oven cook: Preheat the oven to 190°C/170°C fan/Gas 5.

Remove sleeve and lid.

Place the foil tray on a baking sheet and cover with tin foil.

Cook in the middle of the oven for one hour, then remove the tin foil lid, increase the oven temperature to 220°C/200°C fan/Gas 7 and cook for roughly 30 minutes, basting the chicken frequently until golden brown.

To barbeque: Cook as per oven guidelines, then place on the barbecue for a further 5 minutes. Turn frequently to give a barbecue flavour and chargrilled effect.

Adjust times according to your particular oven. (For fan-assisted ovens, cooking times should be reduced. For best results refer to manufacturer's handbook).

Check food is cooked thoroughly and is piping hot throughout before serving.

This chicken is perfect with some homemade coleslaw and smoky baked beans, or just a fresh salad full of lettuce, tomato, onion and cucumber.

EMPIRE CHICKEN

Served with delicious crispy potatoes in a spicy gravy, this exciting twist on a British classic is inspired by the recipe from my TV show Jamie’s Great Britain. To oven cook: Preheat the oven to 190°C/170°C fan/Gas 5. Remove sleeve, lm lid and sachet.

Place the foil tray on a baking sheet and cover with tin foil. Cook in the middle of the oven for one hour, then remove the tin foil lid, increase the oven temperature to 220°C/200°C fan/Gas 7 and cook for roughly 30 minutes, basting the chicken frequently until golden brown.

Heat the sachet of gravy in a saucepan or microwave and serve with the chicken. Adjust times according to your particular oven. (For fan-assisted ovens, cooking times should be reduced. Try this with a crisp green lettuce and cucumber salad, or some lightly cooked broccoli and a lemon yoghurt dressing.

JUBILEE CHICKEN

Thighs, drumsticks & baby potatoes coated in delicious Indian spices.

This amazing tray-bake is great comfort food and fantastic for putting in the middle of the table and all tucking in to. All you have to do is stick it in the oven and wait for the chicken skin to crisp up beautifully. It's lightly spiced with traditional Indian ingredients to give you a warm glow. Made with love.

cooking instructions:
To oven cook: Preheat the oven to 190°C/170°C fan/Gas 5. Remove all packaging. Place the onions and potatoes in a casserole dish or shallow roasting tin and place the chicken on top of the vegetables and place in the oven to cook for roughly 50 minutes, basting the chicken frequently until golden brown.

Check food is cooked thoroughly and is piping hot throughout before serving.

This recipe is fantastic with some tender green beans simmered in a little fresh tomato sauce, and don't forget the crusty bread and butter.
