BACON

Jamie’s range of bacon has been created using his uniquely blended Essex cure. The range only uses premium Maldon Sea Salt in its dry curing, traditionally harvested in Essex, creating a delicious flavour. Jamie’s bacon is hand cured and matured in air drying chambers for a minimum of 21 days – this ensures it delivers great tasting bacon with a fabulous meaty texture. All the water is removed meaning all you get is delicious bacon in your pan – no nasty white stuff!
Heat a splash of olive oil in a heavy-based frying pan over a medium/high heat. Add the bacon and cook for 4 minutes without moving it. Turn the bacon over and cook for another 2-3 minutes on the other side, or until the fat has turned brown and the bacon is as crispy as you like it.
Add the bacon to a cold frying pan and cook over a medium heat for 10 minutes without moving it. Turn the bacon over and cook for another few minutes on the other side, or until the bacon is really hot and the fat is melting out. Remove the bacon from the pan when it's as coloured and crispy as you like it.
Add the pancetta to a cold frying pan and cook over a medium heat for 5 minutes without moving it. Turn the pancetta over and cook for another 2 minutes on the other side, or until the pancetta is as colours and crispy as you like it.
For the perfect bacon buttie, drain away any excess fat then add two slices of good-quality bread to the pan you cooked your bacon in, pressing down firmly, and put back on a low heat until nicely toasted on both sides. Serve with a good dollop of tomato ketchup or brown sauce.
Delicious cooked until crispy and tossed through, or on top of, a gorgeous warm salad.

SAUSAGES

The nation loves British bangers! Jamie's range of fresh sausages contain only the best ingredients; fresh whole cuts of shoulder and belly and a good handful of fresh herbs. The sausages are traditionally made, slowly mincing and mixing the meat and herbs to give a brilliant coarse meaty texture – and no gristly bits!
Remove all packaging. To grill, preheat to a medium heat. Put the sausages on your grill pan and grill for 15 to 18 minutes, turning frequently, or until browned on all sides and cooked through. To fry, heat a little olive oil in a frying pan on a medium heat and fry for 12 to 15 minutes, turning frequently, or until browned on all sides and cooked through.
Remove all packaging. To grill, preheat to a medium heat. Put the chipolatas on your grill pan and grill for 10 to 12 minutes, turning frequently or until browned on all sides and cooked through. To fry, heat a little olive oil in a frying pan on a medium heat and fry for 8 to 10 minutes, turning frequently or until browned on all sides and cooked through.

To oven cook, preheat the oven to 190°C/375°F/gas 5. Put the sausages on a baking tray and cook for 25-30 minutes, turning halfway, or until cooked through. To fry, heat a little olive oil in a frying pan on a medium heat and fry for 12-15 minutes, turning frequently, or until cooked through.
Remove all the packaging. To grill, preheat to a medium heat. Put the saucepan on your grill pan and grill for 15-18 minutes, turning every 2-3 minutes, or until cooked through.
