No one should be scared to have a go at cooking a great roast with crackling, or to use cuts of meat they are not used to - this range is designed to be part of your everyday cooking.

BACON

description:
Jamie’s range of bacon has been created using his uniquely blended Essex cure. The range only uses premium Maldon Sea Salt in its dry curing, traditionally harvested in Essex, creating a delicious flavour. Jamie’s bacon is hand cured and matured in air drying chambers for a minimum of 21 days – this ensures it delivers great tasting bacon with a fabulous meaty texture. All the water is removed meaning all you get is delicious bacon in your pan – no nasty white stuff!

Bacon range:
Essex cure middle bacon – using a great but forgotten cut, the middle bacon uses the eye of the loin as well as all the streaky belly giving you the best of both worlds. The bacon is matured for 21 days and is thicker cut for a great bit.
cooking instructions:
Heat a splash of olive oil in a heavy-based frying pan over a medium/high heat. Add the bacon and cook for 4 minutes without moving it. Turn the bacon over and cook for another 2-3 minutes on the other side, or until the fat has turned brown and the bacon is as crispy as you like it.
Smoked Essex cure streaky bacon – dry-cured streaky that has been smoked over chestnut wood chippings and matured for 21 days for an intense sweet flavour.
cooking instructions:
Add the bacon to a cold frying pan and cook over a medium heat for 10 minutes without moving it. Turn the bacon over and cook for another few minutes on the other side, or until the bacon is really hot and the fat is melting out. Remove the bacon from the pan when it's as coloured and crispy as you like it.
Essex cure British pancetta – extra smoked and thinly sliced for perfect crispiness and a beautiful earthy flavour.
cooking instructions:
Add the pancetta to a cold frying pan and cook over a medium heat for 5 minutes without moving it. Turn the pancetta over and cook for another 2 minutes on the other side, or until the pancetta is as colours and crispy as you like it.
hints and tips:

Delicious cooked until crispy and tossed through, or on top of, a gorgeous warm salad.
