Orange and polenta biscuits
Extremely simple and slightly unusual cookie type biscuits, with the polenta giving a fantastic crunch. Great with ice-cream, chocolatey things or simply with a cup of coffee. This method makes around 25 biscuits.Rub the butter, sugar, polenta and flour together before mixing in the orange zest and the eggs. Cover with clingfilm and put in the fridge for an hour until slightly firm. Place a large square of greaseproof paper on a baking tray and spoon small teaspoons of the mixture in lines 5cm/2 inches apart. Bake in a preheated oven at 190°C/375°F/gas 5 for around 5 to 6 minutes until the outside edges of your biscuits are lightly golden. Remove from the oven and allow to cool for 15 minutes before eating.

Polenta is made out of corn flour. The corn flour is added in water, then boiled, and what you get is called polenta :)

in romania polenta is used as a substitute for bread, especially in the countryside and is part of the romanian traditional menu. Of course te recipe is a bit diferent that the one jamie does but the concept is still the same....

I think Jamie forgot to test this recipe in his kitchen. The biscuits do not come off of the baking paper or even a greased tray. Very disappointing Jamie!

I make these all the time, substitute lemon, tangelo or mandarine zest if I have some. They are fantastic and my "gluten free" friends adore them......there are never any left over!!!

I've tried these a few times, varying the measurements, and they never come out as thin as pictured. By "polenta", do you mean the finished cooked "corn mush" or simply corn meal? I've been using the latter, and that may be my problem. thanks!
