Simple summer spaghetti
A really simple, quick and amazingly tasty pasta dish which always hits the spot and will impress your mates. Try baking some fish filets over the herby tomatoes... it's fantastic.In a large bowl, scrunch the tomatoes with your hands to slightly mush them. Mix in the olives, garlic and vinegar. Tear in the basil and marjoram leaves and pour in the olive oil. Allow to sit for 10 minutes.
Cook your pasta in salted boiling water according to the packet instructions until al dente. Drain and quickly toss in with the tomatoes. Call your guests around the table, then taste the juice at the bottom of the bowl and adjust the seasoning if you feel it needs it. Serve right away.

A really simple way of cooking - colourful and good for impressing friends. A good olive oil makes this dish and the baked fish added on top is a brilliant extra.

Is great for the summer for two reasons
1. It requires little stove cooking - which is great for all those hot summer nights when you don't want to heat up the kitchen with a stove. I made this dish with friends the other night and we prepared all the ingredients out side and boiled the pasta on the stove
2. Its sooo Fresh and a great way to really taste tomatoes.
TIP: Top off with a heaping spoon full of Ricotta Cheese!

Really good. I used top quality truss cherry tomatoes and they were so sweet. I thought my husband would turn his nose up, but he ate it all and then asked for seconds. I will cook this one again for sure

yes, brilliant if you can find cherry tomatoes. Not so easy to find in Kabul. What's the best thing to substitute them with? Or can I just add sugar to normal tomatoes to make them sweeter?
