Sweet tomato pasta

Heat a splash of olive oil in a pan and slowly fry the onion and garlic. Add the oregano and chilli and cook for 4 minutes until sweet and softened.

Pour in the tomatoes and simmer gently for about 15 minutes, then break the tomatoes up with a wooden spoon. Add the balsamic vinegar and the sugar and stir until you have a nice fine tomato sauce.

Meanwhile, bring a large pan of salted water to the boil and cook the pasta according to the packet instructions. When cooked, drain in a colander.

Toss the pasta with the tomato sauce to mix. Season and sprinkle over the torn basil. Serve with your lemon roasted chicken.

This pasta dish was lovely! However, my two boys (14 and 12) found the chilli made it toooo spicy so next time, I will reduce it. Really easy and simple to make. Thanks!

Simply a quick and nice piece of pasta recipe. I hardly use any vinegar in my cookings but after tried this recipe, it is just wonderful. My kids just love it.

Delicious! I used 1 teaspoon of chili powder instead of a dried chili, and it was very good. If you like it hot add more chili powder.

I was given the Jamie at home cook book and tried this recipe. I only made half the recipe as its just 2 of us and added sliced carrot and courgette. It was great! next time I'll make the full recipe and take the rest to work for lunches.

This is a lovely recipe, I only had chilli flakes to hand but they were ok. Should be just as delicious cold.
