a cracking pesto sarnie

method


To make one sandwich, spread some Italian herb pesto over 2 of your slices of bread. Drape some nice thin slices of cold rare roast beef and a few salad leaves on top of one of the slices. Sprinkle with salt and pepper, then squash the filling down with the other piece of bread and eat straight away with a nice cold beer.

ingredients


• 8 slices good-quality rustic bread
• 1 x jar Jamie Oliver Italian herb pesto
• 12 slices cold rare roast beef
• 4 handfuls of either rocket or watercress, washed and spun dry
• Sea salt and freshly ground black pepper

Ttried it with smoked ham and it's equally delicious!
Maybe Veggies refers to Vegetables, not Vegetarians, and that's why these recipes have meat in them.

Hi Jamie, as a vegan I notice that several of your "veggie" recipes have meat in them . Is it possible to have a section solely for vegan recipes & dare I say it gluten free too please? Ps Love what you are trying to do for the people & the planet , all the best for 2009 from Lin Davis (NZ).
