Meatballs are fantastic! They’re perfect like this, with a one-minute homemade tomato sauce and spaghetti, but you could also try polenta or simple chunks of fresh crust bread. I like to make meatballs with a mixture of beef and pork, as I think it gives a really wonderful flavor and texture.

To make your meatballs
• Pick the rosemary leaves off the woody stalks and finely chop them
• Wrap the crackers in a tea towel and smash up until fine, breaking up any big bits with your hands
• Add to a mixing bowl with the mustard, minced meat, chopped rosemary and oregano
• Crack in the egg and add a good pinch of salt and pepper
• With clean hands scrunch and mix up well
• Divide into 4 large balls
• With wet hands, divide each ball into 6 and roll into little meatballs – you should end up with 24
• Drizzle them with olive oil and jiggle them about so they all get coated
• Put them on a plate, cover and place in the fridge until needed

To cook your pasta, meatballs and sauce
• Pick the basil leaves, keeping any smaller ones to one side for later
• Peel and finely chop the onion and the garlic
• Finely slice the chili
• Put a large pan of salted water on to boil
• Next, heat a large frying pan on a medium heat and add 2 lugs of olive oil
• Add your onion to the frying pan and stir for around 7 minutes or until softened and lightly golden
• Then add your garlic and chilli, and as soon as they start to get some color add the large basil leaves
• Add the tomatoes and the balsamic vinegar
• Bring to the boil and season to taste
• Meanwhile, heat another large frying pan and add a lug of olive oil and your meatballs
• Stir them around and cook for 8–10 minutes until golden (check they’re cooked by opening one up – there should be no sign of pink)
• Add the meatballs to the sauce and simmer until the pasta is ready, then remove from the heat
• Add the pasta to the boiling water and cook according to the packet instructions

To serve your meatballs
• Saving some of the cooking water, drain the pasta in a colander
• Return the pasta to the pan
• Spoon half the tomato sauce into the pasta, adding a little splash of your reserved water to loosen
• Serve on a large platter, or in separate bowls, with the rest of the sauce and meatballs on top
• Sprinkle over the small basil leaves and some grated Parmesan

• 500g good-quality minced beef, pork, or a mixture of the two

• 1 large egg, preferably free-range or organic
• sea salt and freshly ground black pepper
• olive oil
• a bunch of fresh basil
• 1 medium onion
• 2 cloves of garlic
• ½ a fresh or dried red chilli
• 2 x 400g tins of chopped tomatoes
• 2 tablespoons balsamic vinegar
• 400g dried spaghetti or penne
• Parmesan cheese, for grating

Just came back from kitchen...this meal is awesome!!! @Mr Spice - thanks for the fantastic tip, I popped them in a preheated oven at 200C and cooked for 12-14 minutes and they came out perfectly, nice and crispy on the bottom (just the way my partner likes them) and then put them in the frying pan with the sauce. <br /> <br /> @Elaine I used wholegrain mustard instead (because I didn't have Dijon the first time) and 10 Saos (being in Australia I don't have Jacobs Cream) - they came out beautifully. <br /> <br /> I've cooked them twice now and they get better each time, so delicous! :) <br /> <br /> Thanks Jamie and everyone for the hints and tips.

Yo Jamie! Just created this dish for the family! I aint the best cook around but I'm not bad for only having a few years experience. To me, this dish is fun!!! So many way to experiement with the meatballs also. loved the kick of the Djion! although that and the chillie pepper was just a wee bit too hot for my old man! haha

Currently following the american food revoultion on 4OD, its EPIC! Its great that somone like you can go out your way and help a bunch of strangers like that, with so much grief for trying to help, but its so sad and makes me embarresed for the group of people like those fat yanks that think leting your children eat deep fat fried donoughts for brekfast is fine! Child abuse in its basic form...
Anyway. going to try some soups next. cheers brotherrrrrrrrrrrrrr

@Gregg - when I'm on the ball I can do this in 30mins, including prep.
I bake the meatballs for about 12mins in a 200C oven rather than fry them, then add to sauce...practice a few times..good luck!

Lovely recipe, easy, cheap, fun. Great way to get kids in cooking. They so much appreciate when they make their own meal. I only think 1 spring of rosemary is enough. First time I put four and it was overpowering and second time I put 2 and today I'm trying to put one and I think it will be just right.

Fantastic show, idea, heart---as usual. I'm definitely on my the Jamie Oliver team--you're on my list as a mentor for sure! I come from both sides of the food spectrum; working in professional kitchens in London, San Francisco and Vancouver--but learning how to cook in my grandma's kitchen..She's 93 years old, and still baking fresh whole wheat bread, and still whipping up fresh organic ice cream! They lived through the depression, so many of the family recipes are really simple and inexpensive. I love the "Ministry of Food" concept--but I think the recipes could be more accessible, simple and frugal. Take the meatball recipe for example; many people don't know what Dijon mustard is, let alone have a big jar of it in the fridge, and fresh herbes, while easy and cheap to grow..in reality are often bought at the shop and are expensive..seriously every 2 dollars adds up. Olive oil and parmesan are other luxuries for many families. And some people don't know what a grater is for. This recipe uses 3 pots, which is too much for a busy person. I think toning it down, say oil in a pan, brown the meat, add a shopped onion, green pepper, maybe dried herbs, dash of whatever is around, can of tomato sauce---serve over pasta..super healthy, tasty, and a little easier. Some of my grandma's depression-era recipes are the best--and she's still got the one's from the war time....lentil loaf instead of meat loaf for example--and SUPER inexpensive. I have followed a similar recipe on the ds
and my family want this at least once a week my daughter aged 16 helped me one week and this week she maid it for us all. and it taste even better when someone else makes it you must agree.
one really great recipe so easy and its one meal we can cook that we all love

i watched a few episodes, signed up to the itunes downloads and have tried three recipes. my wife and daughter loved them!

for the meatballs i didn't have the crackers but substituted 4 wheat bix (worked out great!). in the fish pie potato mash the nutmeg was awesome!

have tried to convince friends, staff members and customers to check out your site!

Found a combo of Beef/Pork works best. They cook more evenly in the pan and hold together better, plus they're juicier!

I was thoroughly disappointed with this recipe. The crackers are a cheap substitute for a vital ingredient in what should be a classic Italian meal. If you knew how to swear like a pro then maybe you'd get a decent reputation. Otherwise it just looks frivolous.

These are easily the best meatballs I have ever made. The crackers (which I guess are a substitute for stale Italian table bread - similar flavor and texture - very clever!) gave them a fab consistency and the rosemary and mustard gave them a terrific flavour. They're also the only meatballs I've ever made that haven't disintegrated as soon as I've put them into the sauce.

I'll be making these over and over again. Awesome recipe! Thanks Jamie!!!

How do you determine how much a lug of olive oil is and the same for a little splash of water?
I'm just getting into cooking (was forced to by my wifes ill health), but still need a lot of guidance.
Seeing whether something is still pink or not is a problem too because I am color blind, so I just tend to cook things for that little bit longer to be sure.
I really would love to try this recipe soon.

We are demonstrating meatballs at school during lunch times this week, as part of a healthy eating initiative, to encourage students to cook for each other. Made this dish last night!!!!! For added deeper flavors I put in 2 Tbs of Harry & David onion and pepper relish. I also put in another Tbs of balsamic vinegar. Hi Jamie... I'm a catering apprentice and figured watching MOF may give me some inspiration to impress the boss... lol.

The show was fantastic, only problem, the swearing made u sound like Ramsey. Don't stoop that low man lol, ur too big an inspiration to let it slide with a few "F-Words" lol. Anyways...

The Mother-in-law is coming down next friday and im cookin for her, and my partners sister and in total for 7 people. So, as u can imagine i'm pretty nervous (first time meetin her too :S) But yh, i shall enjoy using ur meatball recipe and i shall get back to u on how it went...

hey Jamie, im a 12 yr old kid living in Melbourne, Australia and i was watching your show and i saw the way you cooked and then i wanted to cook something because i love cooking and i want to become a great chef just like youand i want to inspire people to eat healthy food. anyway i was thinking of what to cook. it took me a while but then i thought of a recipe. heres my recipe, i hope you enjoy it.

1.First, I chopped up some red capsicum and 2 mushrooms and slow cooked them in a pan with a little bit of butter and then i put in a teaspoon of water. i stirred it for a while and when the water dissolved, i put in some bush spices. i stirred the mushrooms and capsicums and then i place them in a plate.

2. The second thing i done was to whisk 2 eggs in a bowl and then I added pepper and salt. Then i put a little bit of butter on a pan and I poured my egg on the melted butter on the pan. and then i tilted my pan so the egg was covering the whole pan so it looked round.

3. Then after the egg was nearly cooked i placed my mushroom and capsicum on one half of my egg. i then placed some singles sliced cheese on top of my mushroom and capsicum and i waited until it melted a bit.

4.I then brought my other side of my egg and covered the other side which had the mushrooms and capsicum on it.

5. Then I turned of the heat and let it cook for 1 min with the heat off. When it was cooked i placed it on a plate and i put a little bit of chopped parsley on top.

6. i served it with some freshly squeezed orange juice.

It tasted GREAT!

Making this recipe last night wasnt just a meal, it was a family event. We all helped, sat round the table and ate together. Fantastic food Jamie, we will keep trying the rest of the recipes. Ever thought about a simple cook book for kids?
Once i had bought the herbs which last for 4-5 meals, all it takes is a can of tomatoes and some mince for another great meal cost: 3 quid for 4 people. Doesnt get any better! Excellent stuff Jamie

Just wanted to send HUGE thanks your way....I just recently married into an Italian family that loves to eat as much as I love to cook. I am English, but I love Italian foods. My husbands mom "ma" is an amazing cook, but just celebrated her 76th birthday, and we think she has started to enjoy relaxing more than cooking. She has taught me her best family favorite recipies (which are old school delicious), but with your help and inspiration....my husband took pasta leftovers to work for lunch for the FIRST time ever!

You are fun to watch on TV, and your books are beautiful and easy to read.

Everybody talking about program over here even with all the fresh produce available but great to come up with quick simple healthy grub.

I have watched every week and been amazed by how much food can change peoples lives,I have two boys and try my best to feed them well so am loving having some new recipies to try. I am apalled by obesity in this country and think it is disgusting that while half the world starves to death the other feeds itself to death and then expects the NHS to take the fall. I think the goverment needs to impliment jamies minestry everywhere and cookery should be made compulsive in schools. Your commitment to healthy eating is so inspiring to watch and its wonderful to see how much difference one man can make! Horray for Jamie!!!!

I watched your program tonight and I knew things were bad but I thought that our current problems were due to our faster pace of life. What's not to love!! I am making the meatballs tonight for the family and already know they will love them as we are all huge fans of your recipes! We have always enjoyed your shows, but your latest series is inspirational! I think it is great that your are tackling the poor eating habits that we have dropped into as a society and trying to encourage not only a healthier appproach, but also an enthusiasm and pride in passing on, it is so rewarding to get the reactions when people love what you do!! I cook just for that reason! Love through the stomach ;-) It is just such a shame that for many it is difficult to see cost effectiveness of cooking from scratch - the cost of a good grocery shop up front to make several meals in a week, costs more than going out and buying take-out as a convenience, for one night, or even a jar of something! So it isn't just the "food" mind shift, but the cost-effectiveness that is such a challenge these days. Your ideas and values about healthy food for life reach world wide and are adopted by so many! Thank you for sharing your knowledge and wisdom.

Think your show is a great inspiration! Well done you!! I thinks it's a shame old fashioned ways of pasing down this knowledge has (temporarily!) been lost. Hopefully people will see the importance again.. Must just say it does annoy me how people say they can't afford to eat healthily, after all vegetables can be the cheapest things to buy. Jacket potatoes must be the easiest and cheapest things to make and anyone can do that!

Jamie is doing a fantastic job for your town and your very lucky what he is doing for you all.
The past it on is a great way to teach healthy eating and knowledge of food and cooking, especially in this day and age its sad to see the state of some communitys/individuals/couples and familys with there lack on knowledge, drive and enthusiasm for cooking and exploring new recipes and with the help of Jamie turning things around maybe even you can be saved but not while you have a bad attitude!

Im sure Jamie wouldnt want to teach/help a negitive rude person as yourself when there is others out there who will truley have there lives turned around for the better.

Hi jamie I live in Dublin and what you are doing is fab its terrible to see young kids these days not knowing what freseh veg look like what ever about adults , We as a family where brought up on veg and potatoes, always sat at the table with family and sunday was the best always got cabbage water made from the corned beeb the night before kpt you going , my kids love veg and are not big meat eaters but god do they look healthy and NOT FAT............. Keep up the good work and rember fresh is best.

Hi Jamie,
I make meatballs myself but I Make my tomato sauce first and bring to the boil then I add my raw meatballs made with; Mince, Chopped mushrooms,bread crumbs,redwine, parmesan cheese, tbls Tom paste & Tbls Vegemite and crushed garlic salt & pepper. They cook nicely in the sauce and I guess would be less fattening.
I enjoy cooking for my family and really enjoyed watching the show. I hope to pick up a few new recipes especially fish as I'm not so great with fish but will give your salmon pie a go soon.

I am mother of 2 and one on the way , and i must say i get a huge buzz from cooking and teaching others . My kids are lucky i guess , they have a passion for food , ( HOme Made ) and they both have been interested from a very early age in cooking and preparing meals...to the point where my Son is now cooking in a hospital ,,, and often cooks for his G/friends Family after collecting recipes from me on the phone!!

I think the program is great !! it has given me the kick up the arse i need to learn to cook and enjoy it. The real people on the show are an inspiration, Jamie came up with the idea and bringing real people in to make these recipes was a great idea and makes me feel like i can do it too. What a great bloke to put in all the time and effort he does! he could have picked a village closer to where he lives but makes all the effort to visit Rotherham, and he really looks like he cares. Fantastic viewing.

If the program say it worked it hasn't! Not 1 of my friends has heard of his recipes till it was on the tv. Im from rotherham and i think its disqusting that my council tax is paying for the shop to be open! He's got enough money so why cant he pay for it??? I think the show has made Rotherham look like a really bad place to live but im proud of Rotherham and we can cook only because he picked the worst people to represent us! He couldn't teach me a thing even if he tried!!!

I have been watching the show and find it totaly inspiring. I am a single mother mother of 2 and find it hard to make time for cooking with working and juggling the kids. (not literaly of course ) ha. your recipes are so simple to follow and quick. I made the meat balls the other nite for the kids and they loved it. My son is a fussy eater and only eats a certain selection of foods. so for him to eat the meat balls was a huge deal. I think it's a great Idea what u are doing with passing it on. It takes little time and effort and does a world of good so well done u.
I will continue to watch and learn from the show and hopefully my young son will continue to eat more of your fab recipes. I wanna say thanx for the kick up the ass i neede to start cooking again. Mmmmmwah x

I love the ministry of food. I am a huge fan. I have your books and cook from them quite often. My family are all fans too. Love how easy you make it look. I cannot wait to go and get the new book so i can get stuck in. I think that cooking should be compulsory in all comprehensive schools. My daughter has just started secondary school in september and she says she can't wait to start cooking lessons. We cook together at home alot. Hope the program is a success. I really enjoyed Jamies new programme, he has the right idea, but I do think he expects people to be able to afford lots of stuff that they may not have in their store cupboards and it can get expensive. unfortunatly i missed the show but will sky+ the next one. i love cooking fresh and have all jamie's books. as for certain comments just aiming hate at jamie, if you have nothing constructive to say, SHUT UP! there are also comments about the expense of fresh herbs, i moved into my own house 3 years ago and bought them in a pot, hasn't cost me a penny since.

I was also taught at school and at home how to cook, yet kids these days dont know where the raw food comes from let alone what to do with it.

i do have more to say but back to work i go :-)

Loved the show and this recipe looks great!

I will defo have to give it a try as i love pasta and meatballs but never had them together lol.

I think it's great what Jamie is trying to achieve, yes more people should learn to cook properly, my Mum had me cooking in the kitchen when i was twelve and no it's not rocket science! Once you know the basics you can learn to cook anything instead of throwing stuff in the deep fryer or microwave. Please, proper cooked food tastes sooooooo much better!!!

For example, i love to make my own scotch eggs. They taste much better than the packaged ones and their simple to make! They go super with a salad. I mean how can you go wrong with some good quality sausage meat, hard boiled eggs and bread crumbs!! yummieeeeeeeeeeeeeeeee

Get in the kitchen and experiment peeps!!!!!!!

Hi, I watched the program this week and thought the overall concept is exellent. My husband and I agree with many of other comments regarding the people on the programme, especially being able to afford cigarettes and alcohol and not healthy food??? How totally selfish of those parents to feed their children shit and not even try to make a difference to their lives. The "not being able to afford decent food" excuse is wearing thin, the £5 recipies prove that ( 1 pack of fags)! I believe that you get out of life exactly what you put in and I hope those parents can look their children in the eyes when they having health problems and not feel any remorse for the fact that they could not be arsed to learn about food and how to cook (books from the library are free). We work hard and have little time but still make the effort to cook healthy food, spending quality time together instead of leaving our child in front of the television for hours on end. Good luck Jamie I think you are going to need it!!!

Loved the program - made me determined to make sure my kids can cook. Think you've gone mad with the ingredients for the meatballs dish though - parmesan, fresh rosemary, balsamic vinegar - why not do some really basic fridge and store cupboard stuff - scrambled eggs, cornbeef hash, shepherds pie, pasta, spag bol etc - stuff people can cook in a hurry on a tight budget, not something you need 15 ingredients for!

I agree with comment no.25 from Julie, can you list some basic ingredients on your site that can be stocked in cupboard. I cook with a lot of processed food and really want to change this, i want to learn to cook properly from scratch and even went to my local sainsbury's today to get some of your 'feed the family for a fiver' recipes but they only had 1! they must of all been snatched up!

I watched the show and think it's a good concept. The people featured amazed me, can't afford to cook proper food for their families but smoking?!? On a low budget week, I can go to Aldi and get good ingredients and cook good meals for a week on about £20 for two people. It just takes imagination and know-how. Certainly cheaper than alcohol (I noticed many discarded bottles/cans at one house) and cigarettes and much healthier. Having little money is not an excuse to give children crisps and chocolate for dinner.

I was shocked, but hope that people in similar situations take some advice from the show and have a go at cooking decent meals.

when will people cop on to the link between what they eat and their health.. why all the cancer, diabetes, heart disease, adhd etc.. could it be because of all the crap they eat...doh!!! pity the government wouldn't have the balls to do what you are.... think of the savings for the health service.... people need to take responsability for their own health... starting with making simple healthy meals.. good on you jamie keep it up.

Fantastic show!I love your shows,but there's not many your shows in China,and I spare the most time in school.I want to buy your books ,but it's difficult to find here,but I will try to find them on internet.I have learned much from you,I will keep on cooking!when I finish my school ,I really want to open a rustuarant in China.I do believe that food can make people happy!cheers man~

hi Jamie I enjoyed watching your show the other night. I was totally amazed by some of the comments though....unbelievable! Like you, I thought they were joking.

In my view society and the family unit as we know it has changed a lot from the war years and everyone has a much more hectic lifestyle and trying to fit everything in is hard. Working single mum's, kids at school until six o'clock so parents can work. There is very little spare time. It's ok if you are at home all day -time to shop, clean and cook but most of us are not.

Don't get me wrong I think it is important for children to have good wholesome food. Yet society is not geared towards this. For instance when i take my son to the numerous birthday parties that are widely on offer nowadays the food is appauling - no healthy options there. So the kids grow up to expect and like this junk.

Having said all this I wish you well with your series I can see what you are trying to do. I like your style, you geniuinely seem to care about people and take the time to understand why people are doing this.

Fantastic show..... can't wait to make meatballs tonight. I work full time so don't get much chance to home-cook, but am definately giving these meatballs a go.
I can't understand why last night people were whingeing about the cost of ingredients. It cost me just £6.05 to feed a family of four. If i were to buy 4 kebabs it would cost me at least £12.00. Ditch the fast food, take-aways and fags and shop and eat healthier.

Watched the show last night - well done - this is fantastic idea! But, not only do you need to show these guys how to cook and pass it on, more primarily, you need to show these guys how to shop on a budget. If they can afford to buy takeaways 7 nights a week and from watching the show, support a cigarette habit for some, with guidance they could have change in their pocket if taught how to shop carefully, making the most of bargains and watching carefully supermarket prices. We are a family of five, I cook from fresh every night and could feed all of my guys a healthy meal every night on some of the budgets that were mentioned on the show last night - it's all about being bothered enough, having a passion for cooking and rising to the challenge. Most of the meals we prepare take no more than half an hour. It probably takes that to get down the takeaway and back!

I think making use of empty school facitilities at the end of a school day is a brilliant idea - it would be nice to see more of that. It is a shame that there isn't more being done in schools to ensure children have the basics. All mine have learnt at home and through scouting. My girls who are 11 and 13 happily take turns to prepare and cook a family meal each monday - and love it! That's how I learnt properly and in turn so are they. And there will be no exception for my boy!

Loved the show - good luck. Agree with all the other comments - My meatballs are healthier though because you don't fry them. Will try your sauce as can never find a decent recipe for one. Hope it works. Guess the whole country is eating meatballs tonight!

I watched your show last night with my son who is just 11, he asked if we could cook meatballs together for the family. He loves cooking and watching you inspires him. Keep up the good work and bringing good food for the family. Schools take note, my daughters only know how to cook because i taught them the schools don't show them enough life skills.

I watched your program yesterday. You have the right idea, but are starting in the wrong place.
People on such a low budget can't afford the sort of things like fresh basil, salmon etc.
They also need to learn how to budget and shop first.
It is worth looking at some of the dishes people had during the war. ie. lots of beans and pulses. Even a large pot of vegetable soup goes a long way when you are on a low budget.
I think this is the results of not teaching cookery in schools.

I watched the program last night, looking forward to next week.Lovin' it. I changed a lot of my cooking after watching school dinners, and I now buy free range or organic eggs, Chickens are still very expensive!!!! I'm going to pass these recipes on to my 4 sons and my daughter and get them to cook along side of me.

We watched ministry of food last night and it was such a good idea to 'pass it on' I think what your trying to do is awesome, even if you don't inspire as many people as you wanted in Rotherham, you always have an effect on people like myself who love to cook your recipes (my husband and son will be having meatballs tomorrow night!) Hi, loved watching the show, I try and cook as much as I can for my children, but we need recipes that don't take to long with small children around and that are pretty cheap but good for you, can't wait to make the meatball it seems a lot easier than the anabell karmel one I use that take forever!! It would be good to have a basic store cupboard shopping list a few spices and herbs flour that sort of thing so you only need to buy a few items and it doesn't cost the earth.

i think this program is great idea.i always cook at home for my family.it is nice to learn something new and the meat balls recipe i know will go down well with children.i think now there are so many additives and preservatives in foods that we really dont know what we are eating.i learned to cook in school aswell as at home but i think it should be compulsory in schools now for boys and girls to learn how to cook otherwise there is going to be more and more health problems facing our children in the future

I hope this will be a success and catch on as you seem to really care about people's health and most importantly our future generation (children).
