method


Preheat the over to 170°C/325°F/gas 3. For the custard base, bring the milk and cream just to the boil in a saucepan. Cut the vanilla pod in half, scrape out the seeds and add to the pan. Whisk the eggs with the sugar until pale, then whisk in the milk and cream mixture, removing the vanilla pod shell.

Dip the hot cross bun halves in the mixture, then place in an ovenproof dish. Drizzle over the Cognac and sprinkle over the apricots and the orange zest. Sieve the custard over, and leave it all to soak for at least 15 minutes.

Place the dish in a roasting tin, half-fill the tin with hot water, then bake the pudding for about 45 minutes. When cooked it will have a slight crust on top but will still be slightly wobbly inside. Dust with the icing sugar and serve.

• 600ml double cream

• 4 medium eggs, preferably free-range or organic
• 170g caster sugar
• 6 hot cross buns, sliced in half and spread with a knob of butter
• 3 tablespoons Cognac
a handful of dried apricots, chopped
• zest of 1 orange
• a little icing sugar

I love this recipe, I make it every easter and it always works. The family love it, it's full of flavour, creamy and very moreish (my waistline loves it too unfortunately;0(!!)

This is one of my favorite recipes, seriously! I actually love it plain though; I usually just use two vanilla pods and do without some of your listed ingredients. I'm from halfway across the world so it's not like I come across hot cross buns and dried apricots on a regular basis.<br /> But despite butchering your recipe, this is the only bread and butter pudding recipe I make on a regular basis. excellent recipe! However, tasted better with cinnamon and nutmeg to give it a little flavour!!! Will serve with Brandy Butter this christmas!

Made lots of versions of B&B pudding, but this is by far the best. Added Orange Triple Sec instead of Cognac for a change - dlicious!

This is an awesome recipe!!! I've been experimenting with bread&butter pudding recipes, but this is the absolute winner! I used brandy instead of cognac, and also added candied peel, but it was superb! Thanks Jamie!

Basically it's as easy as jamie's advert ... half the buns spread marmalade pour on custard. The only difference to what you did is that the recipe says bake for 15 mins at 180˚C, fan 170˚C follwed by a quick 5 minute grill.

Saw this recipe on t.v but this recipe is slightly different as the tv version said to spread marmalade on the hot cross buns. I made the custard as per normal, spread butter and marmalade on the buns, and put it into the oven to bake for 30 mins. I had no idea how to make the recipe as seen on t.v. However, my pudding was awful. Very stodgy and to be honest I prefer bread and butter pudding. To be fair, this recipe is very slightly different, and so I have yet to try it.

I have looked everywhere I could think of for this recipe. I first took it home from Sainsbuy's a few years ago and I loved it, so did all the friends and family I made it for. Then I moved home and the recipe card got lost I am so glad I can make it again now.
