This is a great way to prepare chicken breasts. The texture of the crisp cooked prosciutto goes brilliantly with the tender chicken. Bashing the chicken out thinly before you start cooking means it cooks much faster than a regular chicken breast. If you can't get hold of prosciutto, then any other kind of very thin ham such as pancetta, Parma ham or even smoked streaky bacon will work just as well.

To prepare your chicken:
1. Pick the thyme leaves off the stalks. Carefully score the underside of the chicken breasts in a criss-cross fashion with a small knife. Season with a little pepper (you don’t need salt as the prosciutto is quite salty.
2. Lay your breasts next to each other and sprinkle over most of the thyme leaves. Grate a little lemon zest over them. Lay 3 prosciutto slices on each chicken breast, overlapping them slightly. Drizzle with a little olive oil and sprinkle with the remaining thyme leaves.
3. Put a square of clingfilm over each breast and give them a few really good bashes with the bottom of a pan until they’re about 1cm thick.

To cook your chicken:
4. Put a frying pan over a medium heat.
5. Remove the clingfilm and carefully transfer the chicken breasts, prosciutto side down, into the pan. Drizzle over some olive oil.
6. Cook for 3 minutes on each side, turning halfway through, giving the ham side an extra 30 seconds to crisp up.

To serve your chicken:
Either serve the chicken breasts whole or cut them into thick slices and pile them on a plate. Serve with some lemon wedges for squeezing over, and a good drizzle of olive oil. Lovely with mash and green veg or a crunchy salad!

Looks good.<br /> We roasted two rabbit legs wraped in Über thin pancheta. They were not wild , but quality(and I mean quality) free range. The result was something else <br /> Wild rabbit can be pretty cheap, it may need salting (not difficult) the flavor can be strong. Depends on who you get it from and how long they hung it.<br /> I must try tis chicken recipe. Another moneysaver , buy a whole chicken. I learnt to joint a chicken prety quick, I am no expert.

I made this last night accompanied with April's Rosemary Straw Potatoes. The lemon zest in both dishes brought them two together like two old friends enjoying a pint at the pub. Stellar!

I watched your show some months ago and it inspired me to create my own 'pass it on' experience. I started with the chicken prosciutto and it was fantastic. I was so impressed with the easy preparation and excellent result, that I immediately passed it on to a work friend. She in turn cooked it that evening, loved it and passed it on to her mother in Poland. From there it has traveled to France, Spain, UK and USA. My daughter is off to school in Italy next week and plans to cook this dish for her host family. Thank you Jamie, pass it on is a marvelous way to share the love, not to mention an excellent meal. X
