vegetable curry

In a little vegetable oil, fry the onion gently for 10 minutes in a large pan then add the remaining vegetables and stir together. Add the curry base sauce and simmer gently for around 25 to 30 minutes, taking care not to overcook the vegetables. If the sauce becomes too thick, add a little water to give you the desired consistency.

Tip
This recipe is a guideline, always check your fridge for any surplus fresh or cooked vegetables you may have, and substitute them for the equivalent quantity in the recipe.

• vegetable oil
• 1 medium red onion, peeled and chopped
• 1 courgette, diced
• ½ butternut squash, peeled and diced
• 100g mushrooms, quartered
• 1 red pepper, diced
• 150g cauliflower, broken into florets
• 600ml curry base sauce (see curry base sauce recipe)
• 400ml water

7. deek Wed 04 Mar 2009 @ 14:30 i once ate a veggie curry and i was sick to the stomach i nearly died one time i used to eat a curry once a night until one night i rushed to the toilet but it was......too late i had done the buisness in my y fronts my y fronts actually overflowed with the weight at each sides it then proceeded to run down my leg and cause a great warm sensation afterwards i went for a jog to make myself feel better

Ingredients were: Minute rice, green and/or red sweet peppers, chopped onion, curry powder, and fresh or canned tomatoes. HELP!! This was one of my family's favorites.

18. ty Mon 03 Mar 2008 @ 12:54 its quite a nice recipe...butthe curry sauce gets really over boiled this way( 25 minutes when u make the basic sauce...and then another 20...)it just looses all its nutritional value!!
