This cheeky little version of eggy bread is one of my favorite breakfasts - particularly if I’ve got a hangover! Brown sauce is great with the eggs but maple syrup is fantastic with the smoky bacon, so take your pick. I got the idea of adding some chili from a scrambled eggs dish I had in Italy – delicious.

Crack your eggs into a bowl and give them a little whisk with a small pinch of salt and pepper and most of the chopped chilli. Then heat a large, non-stick frying pan over a medium heat and fry the bacon in a tiny amount of olive oil. Let it crisp up on both sides. Meanwhile, get your crumpets and really push them into the egg and chili mixture. Turn them a few times – they’ll soak it up like a sponge. Push the golden bacon to one side and tilt the pan so the fat runs into the middle. Add the crumpets to the pan and fry them for a few minutes until golden, then turn them over and fry them on the other side.

Serve the eggy crumpets topped with the crispy bacon, with a dollop of brown sauce or a drizzle of maple syrup. To finish, you can sprinkle over any extra chopped chilli, if you’re a chili freak like me. Perfect – heaven on a plate.

I make these regurlarly for breakfast now.. love them!!! I eat them with maple syrup I got from the farmers' market. Seriously heaven.

Just made this for the first time this morning and bam! So delicious...especially with maple syrup. Note to self though: don't rub your eye after handling a chilli. I had always wondered what it would feel like and now I know. ;)

This has become one of my fave breakfasts. I mistakenly bought some Green Peppercorns in Brine instead of Capers and couldn't find many uses for them. So instead of Pepper I now use Peppercorns. They disappear into the crumpets and you can't see them. Just when you're thinking to yourself, not very peppery, you hit a peppercorn, and BAM, your mouth is filled with the taste of pepper which stays for the next few mouthfuls. Then wait for the next one. It's like a pepper minefield!

Dear all....... I think it a little obvious that when your cooking anything!!! You can try anything you think might go with it. Or even something you think might not. I do like eggy crumpets and have been doing so for many years, they go great as plain eggy crumpets with a proper!!! full english breakfast!!! (bacon, sausage, egg, beans, hash browns(potato patties for usa and canada), mushrooms, black pudding, grilled tomatoes. Ketchup or brown sauce is optional) ;-).... I've topped them with smoked salmon, spring onion and cream cheese. Or as a spicy snack with a curry, ie alternate to naan bread (add any spices you would normally like with naan bread, only it has the added bonus of being eggy). I'm not a professional chef but I do love experimenting when I'm in the kitchen, and that is usually where ppl find something fantastic that they didn't think possible. Good shopping and eating all. :-)

This is also fabulous topped with a good dollop of hot mexican style salsa, it's a real kick start to your day and blows most hangovers out of the water.

Hi Jamie, have followed you for years. I am opening an establishment in spain. Trouble is although i am catering for scottish and spanish, i am having trouble finding some products, so as a catering venue, have decided to make the products i can't find. Can you give me a recipe for brown sauce, though as a condiment, i find it give a nice edge to some tomato recipes that can overpower, what its meant to be dressing............hope you can help.

Tried ya eggy crumpets this morning, dont really care much for chilli's but replaced it with 'Tangy Tomatoe Relish', spot on !!!!!!!!!!

Brown sauce is HP sauce. It's great, love it!! But here in the Netherlands it's verry hard to get...shame! But in the UK you can get it everywere. Just ask for HP sauce. And Jamie, the breakfast is super, thanx..
