smoked salmon and scrambled eggs

There's nothing better than a nice bit of smoked salmon and scrambled eggs. The best thing is if someone else makes it for you, so drop some hints!

Melt the butter in a small saucepan over a moderate heat until it’s foaming. Whisk the eggs in a bowl and add to the saucepan. Stir the eggs continuously with something flexible like a spatula to get right into the corners, and cook until little pieces of cooked egg are surrounded by soft, smooth and still quite runny egg. The egg will continue to cook even when the heat is turned off, so undercook them slightly and leave them in the pan while you butter your toast. Season the eggs to taste and pour over the toast. Drape the salmon over the eggs and serve it with the lemon wedges. Add plenty of black pepper and serve immediately.

• 30g butter, plus a little extra for spreading
• 6 large free-range or organic eggs
• 2 slices sourdough or crusty white bread, griddled or toasted
• sea salt and freshly ground black pepper
• 4 slices of smoked salmon
• 1 lemon, quartered

It was delicious. Cooking the eggs so that there is still some runny egg around the cooked eggs makes this dish taste even tastier. Asud

17. Shane Murphy Sat 09 Feb 2008 @ 02:06 My hint is that the best scrambled eggs are done in the microwave. If you know how to use a microwave and can do this dish so its slightly runny, not firm, your partner, family friends will think your a magician! Sue you are spot on. I agree toss the smoked salmon in for about 40 seconds and the addition of dill as Tammy says sets the dish off superbly. Also consider freshly chopped parsley to garnish instead of dill for a more subtle English influenced flavour.
