There's nothing better than a nice bit of smoked salmon and scrambled eggs. The best thing is if someone else makes it for you, so drop some hints!

Melt the butter in a small saucepan over a moderate heat until it’s foaming. Whisk the eggs in a bowl and add to the saucepan. Stir the eggs continuously with something flexible like a spatula to get right into the corners, and cook until little pieces of cooked egg are surrounded by soft, smooth and still quite runny egg. The egg will continue to cook even when the heat is turned off, so undercook them slightly and leave them in the pan while you butter your toast. Season the eggs to taste and pour over the toast. Drape the salmon over the eggs and serve it with the lemon wedges. Add plenty of black pepper and serve immediately.

• 30g butter, plus a little extra for spreading
• 6 large free-range or organic eggs
• 2 slices sourdough or crusty white bread, griddled or toasted
• sea salt and freshly ground black pepper
• 4 slices of smoked salmon
• 1 lemon, quartered

Try with smoked halibut instead of salmon- it's got deliciously buttery flavour! Wipe a knob of butter all over the inside of a pan. Gently cook just the egg whites with a pich of salt and white pepper while stirring with a wooden or silicon spoon or spatula. When they're cooked remove from the heat and stir in the raw yolks just to warm them through. Great on toasted bagels or muffins!

Makes me laugh that on his most recent programme, he said only use 1.5 eggs per person. When he is served scrambled egg with 5 eggs it makes him want to chunder yet his recipe on here says 6 large eggs for 2 people. Contradiction!

Fantastic jamie a big big favorite of mine, best to use your own free range corn fed eggs if your lucky enough to have chucks also try shropshiresmokery's smoked salmon its devine and a well kept secret in shropshire !!!! a very very small smokehouse producing salmon and stranger things like smoked duck hams ? yes i know or try hendermans irish salmon a good second choice....

Shane Murphy have you ever eaten scrambled eggs done in a microwave? Rubbery, and an insult to the poor hens who laid the eggs! Best ever scrambled eggs are cooked for as long as possible over the lowest heat possible (a candle would be good). Give that a go, and you'll throw out your microwave.

My son Mobine made smoked salmon and scrambled eggs exactly as described as above - with a little help from me. #we doubled up the ingredients and cooked for the whole family. It was delicious. Cooking the eggs so that there is still some runny egg around the cooked eggs makes this dish taste even tastier. Asud

I love this one too and add a bit of goat cheese during the egg cooking process - also add the salmon so it's warmed with the eggs - yummy!

My hint is that the best scrambled eggs are done in the microwave. If you know how to use a microwave and can do this dish so its slightly runny, not firm, your partner, family friends will think your a magician! Sue you are spot on. I agree toss the smoked salmon in for about 40 seconds and the addition of dill as Tammy says sets the dish off superbly. Also consider freshly chopped parsley to garnish instead of dill for a more subtle English influenced flavour.
