Granddad Ken's crispy grilled trout with parsley and lemon
My granddad used to take me fishing when I was about six years old. He has sadly passed away, but the one thing I thank him for is teaching me not to be scared of bones when eating fish.Preheat your grill to full whack. Slash each trout with a knife, about ten times on each side. Each slash should be about 0.5cm/¼ inch deep. Rub the trout with olive oil and season with salt and pepper. Stuff the cavities with plenty of chopped parsley and the lemon slices. Place the fish side by side on a baking rack over a roasting tray.
Put the lemon zest on top of the fish and place the lemon halves on the tray too. Dot the trout with the butter and place it 15cm/6 inches from the grill. Cook for around 6 minutes on each side until crispy and golden.
Squeeze the roasted lemon over the top of the fish and serve with a simple crunchy side salad

I'm baking it right now...it's the first time I'm making myself a trout.
Have tried it grilled with salt, pepper, oregano and it was great but never bought one to cook...

I've been a massive fan of yours since you first appeared on telly all those years ago!. I live in Melbourne in Australia and have all of your recipe books and love cooking from them. I thought that I should share with you that one of my favorite recipes is your Fantastic Fish Pie - I've cooked it so many times and everytime someone new tries it, I'm almost guaranteed to be asked for the recipe! We're having a particularly cold snap today and it's been freezing cold, raining & windy all day. So, to warm the cockles of my husbands heart, I'm cooking my (sorry, your) Fantastic Fish Pie and sharing the recipe with a friend (who reminded me to send it to her).

Doing some trout fishing for some wild rainbow and brown trout in the crisp mountain streams of the Drakensburg in South Africa when spring finally arrives in September- will be sure to try this recipe out on the tour party!

i was just wondering i have seen the sainsbury advert on tv and my grandma liked the look of the salmon fishcakes? (i don't know if that is their real name?!) but i wanted to surprize her and find the recipe and make a meal for her. but can you find me the recipe? hope you can (fingers and toes crossed!)

Jamie's Trout recipe and the Nice's Tray baked Lemon Sole are part of my menu for ever. These are both easy and delicious . 5 star everytime. Through these recipes of Jamie's I am cooking at last. The only regret is it has took me so long to discover them. I am now shell I say "middle aged".
Also where I live both trout and lemon sole are the best value for money fish on the market. This is a added bonus.

hi im just wondering how to make the crackling on pork very crispy but i hate the taste of heaps of salt, is there a way to make the pork crackling nice and crunchy but without heaps of salt...

I now live in New Zealand for the 59 years what i miss i nam eighty years youngow more than any thing are the following.
Good old British FISH AND CHIPS with Mushy Peas the Fish and Chips we can buy here are precooked the day before recooked next day also i miss LAVER SEAWEED
not for getting Scrumpy CIDER that just about blow 'your head off and Would it be possible to get recipes for the about Keep up the good work and visit New Zealand i have most of your books and now live on my own the wife died of breast cancer so i can cook your recipe meals easy may you keep good health for 2008. I was wondering if I could get the recipe that you did, I think with TV M & S, salmon fish cakes.
All I can remember is you poaching the salmon, mashing the spuds, grated lemon rind. What other ingredients, I'm not sure, but you then made them into fish cakes and baked them.
I would appreciate this recipe and look forward to giving it a go.
