roast fish wrapped in pancetta

Preheat oven to 200C. Lay 4 rashers of pancetta, slightly overlapping, in front of you then lay a fillet across them. Wrap the rashers around the fillet, then repeat with the other 3.

Lay your wrapped fish in an oven proof baking dish, then place the it in the preheated oven for 15 - 20 minutes, depending on the thickness of the fish, until the bacon is crisp and golden.

Serve with a nice big spoonful of rocket, lemon and parmesan pesto, new potatoes, a light green salad and a lovely glass of white wine.

Ingredients

• 1 x jar of Rocket, Lemon and Parmesan Pesto
• 4 x 200g white fish fillets, preferably organic, skin off
• zest of 1 lemon
• freshly ground black pepper
• 16 rashers thinly sliced pancetta or streaky bacon
• olive oil
