These are the fluffiest, loveliest American-style pancakes ever. My girls ask me for them all the time and I get big brownie points whenever I make them. The recipe couldn’t be easier to remember and what’s brilliant about it is that it works like a charm every single time. You can have fun with it by switching up the fruit; strawberries, apples, blackberries, blueberries and bananas are all delicious in these pancakes so feel free to swap out the pears for any of those. The batter will keep as good as gold in the fridge for a day or two if you have any left over.

1. Put the flour, milk, egg and salt in a mixing bowl and whisk until smooth. Once combined, grate in the pear, core and all then stir it through with a spoon.
2. Put a large pan on a medium heat and add a knob of butter. Once that melts, add the batter, a spoonful at a time to the hot pan. You’ll need to cook them in batches, cooking them for a few minutes until golden on the bottom, then flipping over and cooking for a few minutes more until they’re done.
3. When they are golden and fluffy, serve them right away with a dollop of natural yogurt and some runny honey drizzled all over the top.

TIP: If you sweeten the batter, thicken it with just a little more flour then pour them into a Yorkshire pudding or muffin tin as they also make the most delicious muffins.

made these for the first time the other day they were so simple and tasty! We didn't have any self - rising flour so we added 1 1/2 tps of baking powder and for fruit added blueberries they turned out great. Today i made them again with grated apple and added some vanilla for some more flavor yumm

I don't get it have tried these 5 times now and I can't get them to fluff up they are flat in the pan what am I doing wrong.

OMG so good!!! Thanx Jamie. Swapped the pears for strawberries and ran out of runny honey half way through the batch so used golden syrup. Yummy!! Defo gonna make this a weekend treat for the kids.

Made these on Christmas eve, ready for Christmas day here in Australia. Added vanilla ice-cream and quality maple syrup...oh my goodness! YUM!! It's the smallest of tips that truly make these the easiest and best pancakes I've ever made. They were praised by the entire family at the table whilst the turkey got a headstart on cooking.

Milk in "american-style pancakes?" Go for buttermilk, even cultured. They'll still be as fluffy, but a *little* better

Jamie your food programs are compulsive viewing, we would all love your kitchen, I know I would. Going to plow through the snow this morning to get self raising flour (run out), and make these pancakes for my four grandchildren.
