I succeed on this recipe! I was using pink sparking wine, fruits are apple slices,pear slices,grape,and tangerine pedals.Especially grape is quite match with the sparking wine jelly! <br />
Hi There<br /> <br /> I am still waiting for mine to set, but I have made this before, and it was fine!!! I think the recipe written before referred to the old measurement of Gelatine, when the leaves were twice the size. Costa, who make the leaves, halved the size of them, and if you read on the outside of the package you'll see that it takes 15 leaves to set 2 pints of liquid therefore 8/9 leaves of the new size should set the liquid, which is double the quantity suggested!!!!<br /> <br /> Good luck with your delicious jelly!!!!
Really lovely dessert, but you've got to use extra gelatine or it won't set. If you decide to follow Jamie's instructions anyway, and it doesn't set, pop it into the freezer while you're having the rest of the meal and you might just about pull it off. <br /> <br />

Hi Christine, In reply to your question, there are vegetarian gelatines out there. Muslims can eat gelatine and there are vegetarian alternatives that are derived from seaweed.

Is there a good substitute for gelatine? My dinner guest is allergic to the regular kind made from animal bone, but maybe there is a product made from seaweed or rice that can be used?

Elderflower Cordial is a soft drink made largely from a refined sugar and water solution and uses the flowers of the elderflower. Lots of lemon in it then i like it ;)
Lars - Printing from most recipe sites is a pain becuse they usually take up 3 or 4 pages when you only need one. It's best to select and copy just the important bits and then paste them into Word and print the single page Word document.
This recipe sounds good though, so we're going to try it!

Marks and sparks sells Elderflower Cordial.Its really in at the moment for recipes.
Tried it over the weekend and tasted really nice with a sparkling grape juice (though lily i will try with lemonade next time - thanks). I made with half measures of everything and found that it was a little too 'collapsed'!! So i suggest using another sheet of geletine to firm things up a little. Really v.nice though!
helen - i seem to remember jamie suggesting subsituting the prosecco for lemonade for teetotallers or children :)

Emelie you could use any sort of cordial you like - summer fruits eg raspberry, cherry, strawberry, or lemon...anything you like!
you can buy packets of gelatine leaves at most supermarkets and these are a standard size so just use the amount stated in the recipe.
If you can't find leaves you can use powdered gelatine and get on the internet to find how much powder equals one leaf.
Punnets are not necessarily standardized so just use the amount of fruit that fits your mould(s) comfortably and looks a generous amount but not too stuffed to the brim!!
