Leek and potato is one of those classic soup combos. Its the perfect thing to tuck into on colder days as its really hearty and comforting. Although it is usually eaten hot, it\'s also surprisingly delicious eaten fridge-cold on a summer\'s day with a squeeze of lemon juice and a dollop of natural yoghurt.

400g potatoes
2 chicken or vegetable stock cubes, preferably organic
