This is a lovely soup very simple and traditional. Its sort of like minestrone which you see sold pretty much all over the place. Once youve perfected this recipe, try giving it an Italian vibe by adding a tin of chopped tomatoes, the torn leaves from a few sprigs of fresh basil, and some broken spaghetti delicious.

2 carrots
2 sticks of celery
2 medium onions
2 cloves of garlic

1 x 400g tin cannellini beans
200g caulifower
200g broccoli
200g baby spinach
2 large ripe tomatoes
2 chicken or vegetable stock cubes, preferably organic
sea salt and freshly ground black pepper
