Make this recipe for one in a snug-fitting baking dish or to save on washing-up, a little tinfoil tray.

Preheat the oven to 200°C/400°F/gas 6. Put 1 chicken breast, with its skin left on, in a bowl. Add 8 trimmed sticks of asparagus, 6 halved cherry tomatoes and the leaves from 1 sprig of fresh rosemary plus a whole sprig of rosemary as well. Toss everything together with a pinch of sea salt and freshly ground black pepper and a drizzle of olive oil. Put the veg into a tinfoil tray and place the chicken and rosemary sprig on top. Season well. Add some white wine and cook in the middle of the oven for 25 to 35 minutes. Serve drizzled with balsamic vinegar.

wonderful recipe, easy and delicious. try brushing the chicken with butter and the skin will turn out really crispy and tasty

On my own for a couple of days, I decided to try this dish. Even I managd to make it quickly and easily and it tasted great. I added some small potatoes to roast around the edge, as someone else mentioned and it worked well. I will definitely make this again, for two, when the usual resident chef returns home. This was wonderful--I used the first Asparagus of the season, locally and organically grown, and had the rest of the stuff in the house. As a working mom, it can be tough to cook for yourself when your spouse isn't home (mine works nights) and the kiddo eats dinosaur shaped food. It's really easy to flake out and get take out, so this is the perfect recipe and the perfect incentive I need to eat well, in little time, with little to no cleanup. I have all the stuff for the bombay chicken and potatoes, and will make that one tomorrow. As always, Jamie, you're the best.

Fantastic recipe! Really simple and fast but looks and tastes impressive. I didn't find it made the asparagus soggy at all and the tomatoes go lovely and squishy. Try it!

There is a fundamental problem with this dish. The asparagus and the tomatoes completely overcook and become very soggy in the time given, i.e. 25-35 minutes.
I first fried the chicken breasts on a high heat for a few minutes to get the skin golden and then followed the recipe, but as I said, the vegetables overcook too much. Next time, I'd cook the chicken on its own and then add the asparagus and tomatoes in the last 10 minutes.

Just made this recipe for dinner tonight.Olive oil and balsamic vinegar will never get old! It was nice how the veggies were cooked right in with the chicken protein so you only needed one baking dish. I just added some rosemary flavored rice and foccacia bread on the side and we had a balanced healthy meal with hardly any dishes to clean after. :) I didn't particularily care for the tomatoes in the recipe so I'm thinking next time some roasted red peppers would be a delicious as an alternative. I will definetly try this recipe again- it was quick, easy, and yummy!

I tried this recipe a couple of times but the chicken always turn out very very dry! I did not use aluminum foil because of the "metallic" after taste that it has but I did cover it with aluminum foil. Any tips?

I tried this recipe twice and, as always, yum, yum., yum! The second time, I used the thigh filet and, the result. . . juicier and yummier!

great recipe for working couples. No,15 MM used sav blanc not bad.

You can also use alcohol-free wine. It often works just as well as ordinary wine. I reckon that it would be excellent with this recipe.

What a great recipe. It was so easy tho throw together. I put the thyme and some lemon slices under the skin, which i rubbed with salt pepper and cayenne. no brainer, and the girl friend was super impressed :) everyone's happy!

I cooked this tonight. It was so simple & easy - the outcome was delicious. I didn't have all the ingredients to hand but wanted to use up asparagus, tomatoes & chicken, no white wine on hand so used white wine vinegar (sprinkle)dried rosemary instead of fresh. This is one I am keeping for its taste & ease of preparation - will only improve with stipulated ingredients. Thanks Jamie!

Sorry I am not Jamie - I reckon stock would work just fine. One thing my teetotal friend always claimed was that all of the alcohol cooks off leaving just a flavour.

its great, it only takes a couple of minutes more than doing one of those packet things and the result is fantastic. you also know exactly where your chicen comes from.
