roasted chicken breast with cherry tomatoes and asparagus

Make this recipe for one in a snug-fitting baking dish or to save on washing-up, a little tinfoil tray.

Preheat the oven to 200°C/400°F/gas 6. Put 1 chicken breast, with its skin left on, in a bowl. Add 8 trimmed sticks of asparagus, 6 halved cherry tomatoes and the leaves from 1 sprig of fresh rosemary plus a whole sprig of rosemary as well. Toss everything together with a pinch of sea salt and freshly ground black pepper and a drizzle of olive oil. Put the veg into a tinfoil tray and place the chicken and rosemary sprig on top. Season well. Add some white wine and cook in the middle of the oven for 25 to 35 minutes. Serve drizzled with balsamic vinegar.

This was a healthy, inexpensive, quick meal which I doubled to serve two. We didn't have any white wine so we used red and it was EXCELLENT. If anyone has done it w/white, would love to know what that was like.

its great, it only takes a couple of minutes more than doing one of those packet things and the result is fantastic. you also know exactly where your chicen comes from.

Hi Jamie :o)

This is just the recipe I was looking for. Simple to do. However, we don't drink wine or any liquer at all, what can I substitute it with? Chicken stock?

Sorry I am not Jamie - I reckon stock would work just fine. One thing my teetotal friend always claimed was that all of the alcohol cooks off leaving just a flavour.

I cooked it with Rose wine, and it was wonderful! Also substituted Rosemary for Herbs de Provence - still good!

I cooked this tonight. It was so simple & easy - the outcome was delicious. I didn't have all the ingredients to hand but wanted to use up asparagus, tomatoes & chicken, no white wine on hand so used white wine vinegar (sprinkle)dried rosemary instead of fresh. This is one I am keeping for its taste & ease of preparation - will only improve with stipulated ingredients. Thanks Jamie!

I added some whole garlic cloves and squeezed a lemon over the chicken, also put some thyme in with it, served with some small roasties ..... Nice!

What a great recipe. It was so easy tho throw together. I put the thyme and some lemon slices under the skin, which i rubbed with salt pepper and cayenne. no brainer, and the girl friend was super impressed :) everyone's happy!

Syana,

You can also use alcohol-free wine. It often works just as well as ordinary wine. I reckon that it would be excellent with this recipe.

I made this recipe and it was a hit. I live with three guys in a share house, and they kept coming into the kitchen because of the wonderful smell of rosemary and chicken roasting in the oven. It's easy and delicious! Thanks Jamie.

hi ,im desperatley trying to eat healthy an loose a bit of weight im sick of eating rubbish so im after some easy to cook recipes that i can either cook myself or put in the slow cooker as i work shifts it can be hard to eat right many thanks
