This cheesecake is one of my personal favorites. It\'s called sernik in Polish and is usually served during Christmas. There are many different varieties and each Polish housewife has her own version, like me. Still, I remember what success did the cake, when I had served it for the first time to our friends. The cake contains quite a few ingredients and requires time to prepare, but taste is unforgettable, and worth all the work.
Ingredients
pastry:
350g plain flour
200 g sugar
50 g cocoa
3 egg yolks
200 g of room temperature butter
1 teaspoon baking powder
cheese mass:
500 g cream cheese
750 g quark cheese
6 egg yolks
6 egg whites
200 g of room temperature butter
2 teaspoon vanilla
50 g desiccated coconut
juice and zest from 1 lemon
50 g potato flour or corn flour
200 g of nuts and dried fruits (walnuts, almonds, orange peel, raisins, figs)
Method
Mix all the ingredients to pastry.Knead into a smooth pulp, plastic and place in refrigerator at least an hour.
Preheat the oven to 170 ° C (fan oven about 25 º C lower temperature).
Whisk egg yolks with sugar until fluffy and add the butter in batches.
Whisk in cheese and remaining ingredients.
Whisk egg white and gently mix with curd.
Use a rectangular pan 30cm x 40cm high.
Grate the pastry and place evenly over the pan. Pour the batter and finish with grated pastry on top.
Bake the cake for about an hour. Feel it with a wooden stick on the cake has set.
Let cake cool before serving.Enjoy!

How much sugar goes in the cheese?
Let me know how it went. My Swedish friends (I actually live in Sweden for 21 years now but still have strong roots in the Polish cuisine) love this cake and been very successful with it, when they bake it.
