I realise that a friend of mine will be gone comes September. Therefore, I wanted to do something special for him especially that I already had cooked for another friend of mine the day before. Naturally he was the next one in the queue. You must know that I only cook for people that I care for. Putting my heart in cooking makes it a bit of an intimate thing for me. I never cook large quantities either. You eat it and that’s it. No second helpings. The next one is never the same… Because I found lots of cherry tomatoes in a box in the streets the day before it only made sense to do something with them (yes, still being sustainable). I remembered I did this hot salsa the other week, which was actually slightly modified Jamie’s recipe, served with grilled fish and thought I could make it into a pasta dish. Big thanks to the Italians here, this cheap ingredient, appearing daily in my Maltese diet, has never turned me down.
Ingredients
250g ripe cherry tomatoes
70g black olives
2 gloves of garlic
half a chilli
juice of half a lemon
olive oil
Method
To prepare the sauce simply fry the crushed garlic and finely chopped chilli for about 30 seconds in a bit of olive oil. Then add sliced olives and fry until fragrant. Now add the halved cherry tomatoes and keep on a medium heat until tender. Sprinkle the lemon juice and mix with the spaghettini before serving.
