 Tomato and bean salad


This is a very cheap and nutritious salad. Excellent for a quick lunch so busy people will appreciate it.

Ingredients
2 ripe tomatoes

400g fagioli beans

handful of fresh basil

1 tablespoon of lemon juice

olive oil

Method
What you need to do is chop the tomatoes and the basil, mix it with the beans and sprinkle with lemon juice and some olive oil. That’s it. Job done. Wasn’t that easy?

This salad could work quite well with butter beans as well, which would give it a bit of a Maltese taste. I served it with some crusty Maltese bread toasted, rubbed with some raw garlic and sprinkled with some olive oil. Hope you enjoy!
