 light summer salad with salmon fillet

Ingredients
Makes3 serves

3 organic salmon fillets
200 grms green fresh beans
9 tiny tomatoes sliced
1 cucumber sliced
1 big onion chopped and sliced
A handful of cretan olives
Salt
Vinegar
4 table sps olive oil
Parsley
A glass of fine dry white wine

Method
Marinate the salmon fillets with salt , pepper ,thyme ,lemon juice and white wine for 2 hours. Keep them in the fridge.
Add fresh green beans in salted boiling water, and boil for 5 minutes. Drain them and keep them aside to cool.
In a bowl add all the salad ingredients, and use a spoon to combine them. Make a mixture of olive oil and vinegar and add it in the salad. Combine again and set aside.
Use a frying pan to cook the salmon fillets. Set the fire on low mode. Add the fillets with the marinade . Add a glass of wine. Cook slowly and when the wine absorbed, add olive oil. Remember that the fire must be on the low level mode. Cook until fillets brownish, from both sides.
Serve the fillets in the same dish with the salad…
