  • 1.5kg maris piper (or any other floury potato)
  • knob of unsalted butter
  • splash milk
  • nutmeg
  • salt and pepper
1: Basic mash recipe
Peel the potatoes and cut into even sized slices, about 1cm. Bring a large pan of salted water to the boil.

When the water is boiling add the potatoes and reduce to a simmer. Cook for around 10-15 minutes or until the potatoes are soft and cooked through. To check this carefully fish out a potato with a spoon and use a small knife to cut through.

When ready, place a colander in the sink and drain the potatoes into it. Leave the potatoes to steam dry in the colander for a minute then tip back into the saucepan.

Add the butter, milk, pinch of salt and pepper and good grating of nutmeg. Mash the potatoes really well until light and fluffy.

2.1 Cheesy Mash
Follow the basic mash recipe and stir in …
50g grated cheddar cheese.

2.2 Mustard Mash
Follow the basic mash recipe and stir in …
1 heaped tsp wholegrain mustard

2.3 Irish style mash
In a small saucepan add 50mls of milk, along with 5 finely sliced spring onions. Bring to a slow simmer for a couple of minutes then turn off the heat and place to one side.
Make your basic mash (excluding the cold milk) and add most of the warmed milk and the spring onions a little at a time whilst mashing. When you have the consistency you want stir through ½ a small bunch of chives and season to taste.

2.4 Chilli mash
Follow the basic mash recipe and stir in…

½ tsp of dried chilli flakes or 1 fresh red chilli, seeds removed and finely chopped.

2.5 Root Veg Mash
1 kg maris piper potatoes
2 parsnips, peeled, trimmed and cut into chunks
2 carrots, peeled, trimmed and cut into chunks
knob of unsalted butter
salt and pepper
