  • TORTILLA FILLING:
  • 600 g beef skirt
  • Olive oil
  • Salt & pepper
  • ½ a white onion, roughly chopped
  • ½ a chorizo
  • 2 red tomatoes, chopped
  • 1 bunch of coriander, finely chopped
  • 2 packets of pork scratchings, chopped up
  • 6 tortilla wraps
  • 1 lemon
  • SERVE WITH A SALSA
  • 1 x 400ml tin of tomatoes
  • 1 bunch of coriander, stalks finely chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • ½ a chorizo, roughly chopped
  • 1 chili
  • To serve: Natural yoghurt






Bash out the beef skirt as thin as possible / or get a butcher to. Drizzle on some olive oil and season. Put onto a hot griddle or pan to sear, along with the chorizo.

Once cooked removed from the heat and chop the beef skirt & chorizo up on a board to create a mince. Mix the mince together with the white onion, red tomatoes, salsa and coriander. Squeeze lemon into the mixture and serve topped with coriander and pork scratchings, wrapped in a tortilla.

SALSA

Sweat off the onion, chorizo, garlic, chili and coriander stalks then add tinned tomatoes and cook for 20 minutes. Leave to cool.
