700g quality sirloin steak
freshly ground black pepper
Ĺ bunch of fresh mint, roughly chopped
Ĺ bunch of fresh parsley, roughly chopped
1 red chilli, roughly chopped
2 cloves of garlic, roughly chopped
Ĺ lemon, juiced and zested
Place a griddle over a high heat and leave until smoking. Drizzle the steak with olive oil and rub on to both sides, along with plenty of sea salt and freshly ground black pepper. Place the steak on to the griddle pan. Cook for 3-4 minutes on each side for a rare steak and 30 seconds longer on each side for a medium steak.
Meanwhile, bash up the fresh herbs, chilli, garlic and a little seasoning using a pestle and mortar, then squeeze in the juice of half a lemon and stir through a tablespoon of olive oil. When the steak is almost cooked, brush a little of the mixture onto the meat. Remove from the pan and allow to rest for 5 minutes. Then grate some lemon zest over the steak and serve with the remaining sauce.
