ANTI-FATTIE Couscous-salad with tomatoes and parsley

This salad is perfect for a bbq. You can either eat it whilst it´s still a bit warm or when it´s fully cooled off. -------------------------------------------------- *the recipy for rocket oil can be found here: http://www.jamieoliver.com/foodwise/article-view.php?id=2042

Ingredients
1 tblspoon olive oil
1/2 onion chopped

1 mug of veg stock
1 mug couscous
---------------------------
4 little tomatoes
2 handfull parsley
2 cloves of garlic
3 tblspoons tomato puree
salt
pepper
1 tblspoon rocket oil*
1 tblspoon olive oil

Method
Steam the onions until they´re glassy. Add the veg stock and bring to boil. Take the pot off the stove and add the couscous, stir, put a lid on the pot and leave for 10 minutes to swell.
In the meantime chop the tomatoes, the parsley (that just roughly, though), cut the garlic in thin slices and put it all in a salad bowl.
The 10 minutes should now be over. Add the tomato puree, rocket oil, salt and pepper to the couscous and mix it, best with hands.
Now add the couscous to the tomatoes, add the last tblspoon of olive oil. Mix it carefully, if need be, add some more salt and pepper.
