this is my favourite Sicilian recipe cooked in one pot, infusing all the delicious mediterrenean flavours. best served with crusty warm ciabatta bread and Sicilian red wine. Enjoy!
salt & pepper
basil, thyme, rosmary
optional: black olives
brown the chicken legs in olive oil, add chopped onions, slices garlic (according to taste), tomatoes (best use cherry tomatoes), wedges or sliced potatoes (raw), salt & pepper, thyme, rosmary, olives (if used), lemon juice and enough red wine & stock to cover all ingredients. Cook in the oven until chicken is tender and potatoes are done. Garnish with fresh basil leaves and serve with crusty bread. Fingerlicking good and so simple to make!
Pls note: Photograph features additional carrots, which you can omit if desired!
