Alfredo .. my busy night dinner

Ingredients
500g pasta
90g butter
1 clove of garlic, crushed ( i like to add 2 cloves)
1 1/2 cups(150g) freshly grated Parmesan
1 1/4 cups (315 ml) Cream
3 tablespoons chopped fresh parsley
salt and pepper

Method
1. Cook the pasta in a large pan of rapidly boiling salted water until it cooked. Drain and return to the pan .

2. While the paste is cooking , melt the butter in a pan over low heat . Add the garlic . Then Add the cream and the Parmesan , and bring to the boil, stirring constantly. Reduce the heat and simmer, stirring until the sauce has thickend slightly. Add the chopped fresh parsley , salt and pepper , and stir until well combined .

3. Add the sauce to the pasta and toss well so the sauce coats the pasta . This dish can be garnished with chopped herbs or parsley.

NOTE: You can add chicken OR/AND mashroms (after the butter) .. but after a busy day , i like it to make it simple  :D

Cream...what kind? Heavy cream? Sour cream?

Parmigiano-Reggiano is a little pricey for a student, but totally worth it. I was amazed it was essentially cheese, one part cream, but that's why it's so damn good. Very easy, but don't tell that to whoever you're serving it to, because they will be blown away. Delicious

I've made this recipe three separate times and found it to be simple and fool proof. Cook and stir the sauce long enough to dissolve the parmesan cheese (i used parmesan reggiano), or the sauce will be gritty. enjoy it, I did.
