Alu Ki Bhaji - Bengali Potato

Last month I prepared this potatoes for a magazine article, after the pictures all the staff of the magazine loved eating them, you should try it.

Ingredients
250gms Potatoes
2 tbs Sunflower Oil
2 tsp Turmeric powder
2 tsp grated ginger
2 tsp garam massala
1/2 tsp Mustard seeds
2 tsp salt

Method
* Boil, peel and cube the potatoes.
Heat oil in a pan, add the mustard seeds, fry till the seeds start spluttering, add salt and turmeric powder, and the grated ginger, fry for 3 minutes, add the garam masala and cubed potatoes, add little water so that the potatoes absorb the masala and simmer for 4-5 minutes till well blended. Serve hot with roti or paratha.
* For a different taste in it , you can substitute mustard seeds with cumin seeds.
