Apple Chutney

Prepare Jars for bottling, by making sure they are washed and sterilized. Will keep in cool place for 12 months +

Ingredients

Method
3lbs apples chopped
1 1/2lbs onions chopped
1 1/2lbs brown sugar
1/2lb sultanas
1/2lb raisins
1pt vinegar
1oz salt
1/4oz fresh ginger (bruised)
1/4oz dried chillies
1/2 tspn cayenne pepper
Peel & slice apples & onions, put in a saucepan with sugar, sultanas, raisins, salt, cayenne pepper & vinegar. Put the ginger & chillies in a small muslin bag or clean popsock & add. Boil all until tender. Remove the muslin bag, unless you want a hotter chutney in which case leave in until cool.

I'm going to half the quantities because I think it will be too much for my need! I'm guessing by doing this I'll get about 6 jars.

I am in the middle of making this recipe and can tell already that there is going to be far too high a concentration of sultanas and rasins.
