this makes 12 cup cakes. the cream can be made with mascarpone instead of philadelphia
Ingredients
flour 180 gr
baking powder 1 teaspoon
sodium bicarbonate 1 teaspoon
cinnamon 1 teaspoon
5 spices mix 1\\4 teaspoon
sugar 200gr
butter 80 gr
eggs 2
apple puree 130 gr
vanilla extract 1 teaspoon
calvados or cognac 1 tablespoon
apple 1
natural yoghurt 120 gr
lemon zest
Topping:
philadelphia 225 gr
butter 115 gr
powdered sugar 115 gr
vanilla extract 1\\2 teaspoon
cinnamon 3\\4 teaspoon
Method
Mix flour, baking powder, sodium bicarbonate, salt and spice
Melt the butter and dissolve the sugar in it, take of the heat and cool a little bit
Mix the eggs in warm sugar\\butter mixture
Add apple puree, lemon zest, calvados, youghurt and vanilla
Cut the apple into small cubes and add to the mixture
Put in small baking pots and bake 18 mins in the 175C hot over
Mix the cream ingredients and put on the cakes when they r colled down a bit.
