Apple chutney

This chutney goes very well with cheese and crackers... Lovely with Brie cheese, goats cheese or any hard cheese, mild or strong. Makes 1 small jar.

Ingredients
3-4 apples, peeled, pips removed, cut in wedges
7 dried apricots, chopped
1 shallot, chopped
50 ml apple cider vinegar
50 ml brown granulated sugar (if you use a kind of apple that is sour, you might need some more sugar)
1 tbsp honey
a pinch of salt
nigella seeds

Method
1. Mix the apple cider vinegar, the sugar, honey and salt in a sauce pan. Bring it to a boil.

2. Add the apples, the apricots and the shallot.

3. Let it simmer until it thickens. This might take a while, perhaps 45 minutes. Taste the chutney, you might want to add some salt or sugar. In the end, add the nigella seeds.

4. Serve with cheese and crackers.
