Applesauce

Try a variety of spices to replace cinnamon: Nutmeg, allspice, cloves, cardamon even. Or use your favorite herbs: Rosemary or thyme

Ingredients
12 apples, cored and cut into chunks (no need to peel)
1 cup brown sugar
1 tsp cinnamon
dash of salt
A splash of water to cover bottom of pan

Method
Put apples, brown sugar and cinnamon, salt into a large saucepan and add a large splash of water. Cover with a tight fitting lid and bring to a simmer over a high heat. Turn the heat down and simmer until the apples are very soft, about 20 minutes. Puree in a food processor or with a food mill. You may also mash them with a potato masher for a coarser texture.
