Delicate cake with lovely chunks of Apricot. A light mellow glaze really compliments it.
125 ml (1/2 cup) dried apricots
4 eggs separated
1 ml (1/4 tsp) Cream of tartar
250 ml (1 cup) Butter
250 ml (1 cup)sugar
375 ml (1 1/2 cup) flour
5 ml (1 tsp) vanilla extract
125 ml (1/2 cup) Icing sugar
20 ml (4 tsp) peach schnapps or southern comfort
Hydrate the apricots with a bit of water for 5 minutes then drain. Put to side
Put egg whites in a mixing bowl and add the Cream of tartar and make really fluffy
In another bowl cream together the butter and sugar. Gently add a little at a time the flour. Now fold in the egg whites gently. Finally add your apricots and vanilla. Use a 9\" cake tin and cook in the oven for about 55 minutes of 325C
To make glaze
Simply mix both ingredients together and drizzle on top of cake when it has cooled down.
